My 17- month-old LOVES muffins. Every day she is asking ‘muffy, muffy?’ as she gives me her big beautiful irresistible smile. 🙂
I have tried many ‘muffy’ recipes for her, but this one seems to be her favorite right now. And why wouldn’t it be? Bananas. Chocolate chips. Hemp seeds. Chia seeds…. what’s not to love, right? The taste is great, and the hormone-balancing protein & good fats make it the perfect choice for those ‘muffy’ cravings.
My sweet little girl is dairy-free so I have added in brackets how I substitute this for her.

Banana Chocolate Chip Super-Muffy’s
1 1/4 cups dry oats
1/2 cup spelt flour (substitute gluten-free flour here if you wish)
1/4 cup ground flaxseed
1/4 cup chia seed
1/4 cup hemp seed hearts
1/4 cup hemp seed hearts
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 eggs
1/3 cup plain Greek yogurt (I use plain coconut yogurt)
3 medium ripe bananas, mashed
1/2 cup unpasteurized honey
1/3 cup coconut oil, melted
1/2 cup chopped pecans, walnuts or any other nut you love
Handful of chocolate chips – depending on how chocolatey you want them!
Preheat oven to 375 F. Whisk together oatmeal, flour, flaxseed, baking powder, baking soda, and pecans. Combine eggs, yogurt, bananas, oil, and honey. Fold into dry ingredients and add chocolate chips. Bake in greased muffin tin at 375 F for 22 minutes.
Makes 12 large muffins.
