I couldn’t NOT share this one with you!

I love chocolate – no secret there.  Healthy chocolate recipes make me incredibly happy, and this one is one of my most favorite so far.

Quinoa – one of my favorite foods for weight loss and hormones thanks to the high protein, loads of fiber and burst of B-vitamins plus chocolate in an incredibly easy and yummy cookie.  How do you go wrong?

Enjoy – we finished the whole batch in less than a day here.  I bet you can’t eat just one……

Chocolate Chip Quinoa Cookies

  • 1 cup cooked quinoa
  • 1 cup gluten free oat flour (super easy, just throw some oats into your favorite blender!)
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut oil
  • 2 flax eggs – (1 flax egg = 1 Tbsp ground flax + 3 Tbsp warm water)  (you can also use real eggs)
  • 2 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/3 cup dark chocolate chips

Instructions

  • Preheat oven to 350.
  • In one bowl, mix the dry ingredients.
  • In another bowl, mix the wet.
  • Add wet to dry and mix until combined.
  • Fold in the chocolate chips.
  • Place the bowl of dough in the fridge for about 15 minutes.
  • Drop cookies on a lined baking sheet using a cookie scoop
  • Bake for about 12-14 minutes.
  • Let the cookies completely cool before removing from the baking sheet.
  • Store in an airtight container in the fridge.

So easy!
