I love chocolate – no secret there. Healthy chocolate recipes make me incredibly happy, and this one is one of my most favorite so far.
Quinoa – one of my favorite foods for weight loss and hormones thanks to the high protein, loads of fiber and burst of B-vitamins plus chocolate in an incredibly easy and yummy cookie. How do you go wrong?
Enjoy – we finished the whole batch in less than a day here. I bet you can’t eat just one……
Chocolate Chip Quinoa Cookies
- 1 cup cooked quinoa
- 1 cup gluten free oat flour (super easy, just throw some oats into your favorite blender!)
- 1/2 cup coconut sugar
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut oil
- 2 flax eggs – (1 flax egg = 1 Tbsp ground flax + 3 Tbsp warm water) (you can also use real eggs)
- 2 tsp pure vanilla extract
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/3 cup dark chocolate chips
Instructions
- Preheat oven to 350.
- In one bowl, mix the dry ingredients.
- In another bowl, mix the wet.
- Add wet to dry and mix until combined.
- Fold in the chocolate chips.
- Place the bowl of dough in the fridge for about 15 minutes.
- Drop cookies on a lined baking sheet using a cookie scoop
- Bake for about 12-14 minutes.
- Let the cookies completely cool before removing from the baking sheet.
- Store in an airtight container in the fridge.
So easy!
