Energy Balls

Yield 15-20 Balls

These are one of our most favorite snacks – energy balls.  They are easy, delicious & keep your energy going for that long stretch in the afternoon before supper.  All of my kids like them too – big bonus points!

Ingredients

  • 1 cup dry oatmeal (old fashioned)
  • 2/3 cup unsweetened coconut
  • ½ cup organic natural peanut butter (or almond butter, sunflower seed butter etc)
  • ½ cup ground flaxseeds
  • ½ cup dark chocolate chips
  • 1/3 cup raw honey
  • 1 Tbsp chia seeds (optional)
  • 1 tsp vanilla

Instructions

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the fridge for half an hour. Once chilled, roll into balls about 1” in diameter. Store in airtight container in fridge up to 1 week. Makes about 20 balls.
