There is a world outside of boxed cake mixes!

Whether it’s for a birthday party, special treat, or just because…. many of us enjoy… ok… LOVE cake!  I love the smell of cake cooking in the oven, and have always enjoyed making special cakes for my kids on their birthdays.  With 6 {going on 7} kids – that’s a lot of cakes!

My go-to used to be boxed cake mixes.  Easy to make, easy to clean up, & to be honest, that was all I knew.  I never even thought about making cake from scratch, that seemed like way too much work.  Then my husband made me chocolate cake from scratch…. and those boxed cakes never tasted the same to me.

Why was that?  Let’s think about it for a second.  What’s IN those mixes?  I’m not sure many of us even take the time to think about that, do we?  Well, we are going to think about it now.  Here are just a few of the things hiding inside of the boxed cake mixes that may affect your hormones.

    • Propylene glycol, a.k.a antifreeze
    • Bleached flour
    • Cellulose gum
    • Partially Hydrogenated Soybean Oil
    • Artificial Flavors

So, how DO you make a yummy, moist cake without all the other stuff?  Yep, make it yourself.  And I have a delicious chocolate cupcake recipe that is kid-tested & approved just for you.

I made these last week and had not only mine, but a few of my kids friends who absolutely loved them.  I know, I know… it has something GREEN in them – avocados!  Gasp!  Well, I can honestly tell you that the great thing with avocados {other than the amazing health benefits} is that it makes whatever you make smooth & creamy.

Chocolate Avocado Cupcakes

Our favourite healthy cake recipe!

Ingredients

  • 1 ½ cups all-purpose flour
  • 3/4  cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp sea salt
  • 1 avocado, pitted and peeled
  • 1 cup pure maple syrup
  • 3/4  cup milk or milk alternative (I used almond milk)
  • 1/3 cup olive oil
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350. 
  2. Line 12-cup muffin pan with paper liners. 
  3. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in bowl.  Puree avocado in food processor until smooth.  Add maple syrup, milk, oil & vanilla and blend until creamy.  Whisk avocado mixture into flour mixture.
  4. Spoon batter into prepared cupcake cups.  Bake 25 minutes, or until toothpick inserted into center comes out with some crumbs attached.  Cool and enjoy!
