Everyone is looking for ways to boost their immunity during these long winter months. Who knew that you could use PIZZA to help keep the colds & flus away?
My kids love this one and so do I, plus I love how quick & easy it is!

Immune-Boosting Pizza
Recipe per Pizza
1 Tortilla of choice. (I like the Brown Rice tortilla’s from Food For Life, or the sprouted tortillas from Ezekial are also good)
1 dollop of hummus, salsa, or pesto (or simply chop up basil, and garlic, mix with olive oil and salt)
2 Tbs red onion, chopped
2-3 organic shiitake mushrooms, sliced
2-3 black olives, pitted and sliced
4 cherry tomatoes, sliced
handful kale, chopped fine
celtic sea salt and cayenne to taste
flax oil to drizzle post baking
- Heat oven to 300
- Lay out tortilla and cover in a healthy serving of hummus, salsa, pesto or basil/garlic/olive oil/ salt blend
- Layer vegetables over top, adding kale last (you can add a little goat cheese or shredded white cheddar if you want)
- Bake for 20 mins until tortilla is crispy around the edges
- Allow to cool slightly and drizzle with flax oil and sprinkle with salt and cayenne
- Cut into pizza slices
Additional Topping ideas: steamed broccoli or cauliflower, artichoke hearts, bell pepper, fresh herbs like oregano, thyme, rosemary etc., shredded carrot, shredded cabbage, green beans, thinly sliced sweet potato or anything else you find in season at your local market.
