Over the next couple of weeks I will be posting some of my favorite Christmas recipes for you to try. I hope you enjoy them as much as we do!
Chocolate and Carob and Nuts – oh my!
I LOVE both of these recipes and make them every year {ok, I admit, I make them all year round!}. The best part – besides how delicious they are of course is that they are super-duper easy! As a Mom of 5, with a 2-week old baby, plus 2 step-children, easy is a MUST this year!
Remember to share, they can be a great present for friends, teachers, neighbors or anyone else you want to say Happy Holidays to! Just make sure they don’t have a nut allergy first. 🙂
Chocolate Truffles
1 cup raw walnuts, unsoaked
1 cup almonds, unsoaked
1/2 tsp salt
15 pitted dates, unsoaked
1/4 cup raisins or dried cranberries
2/3 cup unsweetened cocoa
2 tsp vanilla extract (optional)
1 Tbs agave or honey
2 Tbs water
1/2 cup shredded coconut or 1/2 cup extra cocoa powder (to roll in)
- Place the nuts & salt in a food processor fitted with the S-blade and process until finely ground.
- Add the dates, cocoa powder, agave and vanilla process until the mixture starts to stick together. Add water as needed & process briefly.
- Form into balls and roll in coconut or cocoa powder
Peanut Butter Carob Balls (makes 30 small balls)
- 1/2 cup carob powder
- 1/2 cup honey (I used raw)
- 1/2 crunchy peanut butter
- 1/2 cup raw sunflower seeds
- 1/2 cup sesame seeds
- 1/2 cup oats
- 1/2 ground flax seed meal
Mix all ingredients together by hand. Form the batter into bite size balls and roll them in shredded coconut.
