Mashed Cauliflower!

Yep, I said cauliflower.  Don’t shut down now… keep reading!

Everybody loves mashed potatoes, and I’m no exception to this rule.  Especially during the holidays.  Because it is Thanksgiving in Canada this weekend, I decided to give you a healthy, delicious alternative to the carb-packed, insulin-spiking mashed potatoes that tend to be on the Thanksgiving table.

Whipped cauliflower makes a perfect stand-in for mashed potatoes. It has a similar taste and texture (it really does!).  It’s  full of B-vitamins to help boost your energy, vitamin C to boost your immune system, fiber to keep you full & feeling satisfied, and best of all, it has about one-quarter of the calories of typical mashed potatoes.

It’s worth a try, isn’t it?  If you aren’t quite sold yet, try making the batch below, have it on the side, with a few mashed potatoes too.  You will be surprised, and you MAY even just fool your family into thinking it’s potatoes if you try!  🙂

 

Whipped Cauliflower

  • 2 cups water
  • 1 small head cauliflower
  • 1/4 cup extra-virgin olive oil
  • 1 tsp sea salt
  • 1 tsp  lemon juice

Directions


1. Cut the cauliflower into florets. Place them in a large pot with the water over high heat and cover.

2. Steam for 6-8 minutes or until soft when pierced with a knife. Uncover, and remove from heat.

3. Transfer the cooked cauliflower,  salt, lemon juice and olive oil to a food processor or blender and purée until very smooth.

If you like garlic, try adding 1 clove of garlic while in the food processor/blender.

Makes 2 cups
