It’s Valentines Day this week, and that means chocolate is up on the blog. As most of you already know, I L O V E chocolate, so this is a big week for me. 🙂
Each day I will post a new, delicious chocolate recipe for you to try. Share it with your honey, your kids or your friends – or keep it to yourself, the choice is all yours.
First up: No Bake Bars. No bake = super easy!
I had a craving last week for these, made them and was so grateful I did. I used almond butter instead of peanut butter (because my oldest daughter doesn’t eat peanuts) and it was just as good.
Worlds Best Chocolate No Bake Bars
Made with coconut oil & honey instead of sugar!
1 cup peanut butter (or almond butter)
1/2 cup honey
1/2 cup unrefined coconut oil (be sure to use unrefined for the coconut flavor)
2 cups dry oats (not instant)
1 cup shredded coconut
1/2 cup chopped walnuts (optional)
1 1/4 cups dark chocolate chips
1 t vanilla extract
Melt peanut butter, honey and coconut oil over medium-low heat. Once melted, remove from heat and add oats, shredded coconut, chocolate chips and vanilla. Stir until chocolate is entirely melted. Pour into a 9×13 pan and cool in the fridge. When it’s set, cut into bars and enjoy. Store in the fridge.
These won’t last long, so enjoy them while you can!
