Strawberry Rhubarb Baked Oatmeal

Strawberry rhubarb anything is one of my favourites - so here is a yummy baked oatmeal recipe for you!


  • 1 cup diced strawberries
  • 1/2 cup chopped rhubarb
  • 1 3/4 cup oats
  • 2  -3TBSP chia seeds
  • 1 teaspoon cinnamon
  • 2 cups unsweetened almond milk
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

For the topping:

  • 1/2 cup oats
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon cinnamon
  • 3 TBSP coconut oil (not melted)
  • 1 cup strawberries
  • 1/2 cup chopped rhubarb

Optional toppings

  • coconut whipped cream, vanilla yogurt, honey


  1. Preheat oven to 350F. Grease your baking pan with coconut oil.
  2. Add 1 cup strawberries, 1/2 cup rhubarb, cinnamon, chia seeds, oats, almond milk, honey and vanilla to a bowl. Mix together. Let the mixture stand for 10 minutes for the oats to absorb the liquid.
  3. While the mixture is sitting, make the oat topping. Mix all the topping ingredients (except for the fruit) in a bowl with your hands to get evenly mixed together. Add the fruit, stir.
  4. Pour the mixture into a baking dish. Top with the oat topping.
  5. Bake for 45 minutes. Remove from the oven and let cool completely.
  6. Slice and top with optional coconut whipped cream.
